Sourdough Cottage Cheese Toast is a 5-minute high-protein breakfast or snack you can make sweet or savory. All you need is sourdough bread, cottage cheese, and your favorite toppings.

Looking for a quick, high-protein snack that’s both delicious and endlessly customizable?

Lately, I’ve been totally hooked on sourdough cottage cheese toast. As a registered dietitian who started lifting weights this past year, getting enough protein is really important to me.

And since I always have plenty of homemade sourdough bread on hand (thanks to my sourdough food blogging), pairing it with protein-rich cottage cheese just makes perfect sense.

Not only is it ready in 5 minutes, but you can make it sweet or savory depending on what you’re craving that day.

It’s a simple snack or breakfast that never gets boring—and I can’t wait to share how easy it is to make.

    Ingredients & Substitutions

Here are some notes on key ingredients. For a full list of ingredients, check out the recipe card below.

    • Sourdough Bread- Use any sourdough bread variety you like - classic, multigrain, whole wheat, everything bagel, olive, or sun-dried tomato are some of my favorites.
    • Cottage Cheese- Good Culture is my favorite brand because it's made with probiotics and simple ingredients like milk, cream, and sea salt. For the creamiest texture, use whole milk cottage cheese.
    • Toppings of Choice- Keep it simple with a drizzle of honey, or dress it up with anything from sliced tomatoes and basil to smoked salmon and everything bagel seasoning. Check out the "Topping Ideas" section below for more inspiration!

    Tips for Success

    • Choose whole milk cottage cheese. It’s creamier and more satisfying.
    • Use homemade sourdough. If you're a sourdough baker, this is the perfect way to use your homemade bread.
    • Prepare just before serving. Toast is best when it’s fresh and crisp. Letting it sit too long can make it soggy.
    • Play with textures and flavors. Think crunchy, creamy, spicy, or bright—like everything bagel seasoning, fruit jam, chili crisp, or lemon zest.
