Pizza is a staple dinner in my house. But when the summer heat hits, turning on the oven is out of the question.
That's why I've turned to grilling for my summer pizza fix!
Grilling pizza can be tricky, but I'm here to make it a little easier for you. Instead of one big pizza, I like to make smaller ones for easier handling. I also set up a workstation nearby with everything I need to keep things simple.
For this grilled sourdough pizza, I use my popular sourdough discard pizza dough recipe, but you can use any dough you prefer. You can also get creative with your sauce, cheese, and toppings to make it your own!

- Sourdough Pizza Dough- My sourdough discard pizza dough recipe yields two large pizzas, but to make it easier to grill, I divide it into four dough balls instead. Feel free to use your preferred pizza dough recipe.
- Pizza Sauce- I usually use my San Marzano marinara sauce recipe for pizza, but feel free to use any tomato sauce or other sauce of your choice!
- Mozzarella Cheese- For the best homemade pizza, always shred your own cheese. It melts more easily and has better flavor.
- Toppings of Choice- Use whatever toppings you like (see below for ideas)!
How to Make Grilled Sourdough Pizza
Here is how to cook pizza on a gas grill using sourdough pizza dough.
Step 1: Preparation. Preheat your gas grill on high until it reaches 550℉. Divide the pizza dough into 4 equal-sized portions for individual pizzas. Set up a workstation near the grill with your dough balls, sauce, cheese, and toppings ready to go.
Step 2: Adjust the grill temperature. Reduce the heat on one half of the grill to low, creating a direct heat side and an indirect heat side.
Step 3: Grill the pizza dough. Take one piece of dough and stretch it to your desired thinness. Carefully place the stretched dough on the grill grates over direct heat. Close the lid and cook for 3-4 minutes, or until you see grill marks and the dough is partially cooked. Use your nose and eyes to monitor the cooking process closely to avoid burning.
🍕 Quick Tip: If your grill is large enough, you can cook more than one pizza at a time.
Step 4: Add toppings. Flip the partially cooked dough to the indirect heat side of the grill. Quickly add your pizza sauce, cheese, and any desired toppings. Close the lid and cook for another 5 minutes, or until the cheese is melted and the dough is cooked through.
Step 5: Slice and serve. Remove the finished pizza from the grill using tongs. Slice and serve your grilled sourdough pizzas hot off the grill.
Topping Ideas
- Sauces- Top your grilled sourdough pizza with classic marinara sauce, bolognese sauce, alfredo sauce, or pesto.
- Cheeses- Fresh or shredded mozzarella, parmesan, provolone, feta, or goat cheese are all delicious on homemade grilled pizza.
- Toppings- Get creative with fresh herbs (like basil), vegetables, mushrooms, pepperoni, BBQ chicken, or buffalo chicken.
What to Serve with Grilled Sourdough Pizza
Serve grilled sourdough pizza by itself or alongside summer favorites like grilled corn on the cob, spinach caprese salad, strawberry goat cheese salad, or Mediterranean black bean salad.
How to Store
To store leftover pizza, place it in an airtight container or wrap tightly in foil or plastic wrap. It'll stay fresh for up to 4 days in the fridge or up to 3 months in the freezer.
Reheat using the grill or oven for the best results.

- Remove the finished pizza from the grill using tongs. If needed, allow the grill to reheat before cooking the next pizza. Repeat the grilling and topping process for the remaining dough portions.
- Slice and serve your grilled sourdough pizzas hot off the grill.
