    • Freezer- I do not recommend freezing this homemade black bean corn feta dip. Freezing dairy and fresh vegetables may cause unappealing textural and flavor changes.

    Make Ahead

    This easy black bean corn feta dip is perfect for parties because you can easily make it ahead of time and store it in the fridge for up to 2 days. In fact, the flavors will meld and become even more delicious if you let the dip chill in the refrigerator for at least 30 minutes before serving.

    • 2 ears (about 1 ½ cups of kernels) corn on the cob husks and silks removed
    • 8 ounces feta cheese crumbled
    • 1 cup plain Greek yogurt
    • 1 clove garlic grated or finely minced
    • ¼ teaspoon kosher salt
    • ¼ teaspoon black pepper
    • 15 ounces low-sodium black beans drained and rinsed
    • ½ cup scallions (green onions) chopped
    • ½ cup cilantro chopped

    Instructions

    • To cook corn on the cob, bring a large pot of salted water to a boil over medium-high heat. Once boiling, add the peeled corn and reduce the heat to medium.
