Ingredients

For the Balsamic Vinaigrette

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic grated or finely minced
  • teaspoon kosher salt
  • teaspoon black pepper
  • 3 tablespoons extra virgin olive oil

For the Strawberry Spinach Salad

  • 5 ounces baby spinach
  • 1 pound strawberries thoroughly washed and sliced
  • 4 ounces crumbled goat cheese
  • ½ cup chopped walnuts
  • ¼ cup diced red onion

Instructions

Make the Balsamic Vinaigrette

  • In a small mixing bowl, whisk together balsamic vinegar, dijon mustard, honey, grated garlic, kosher salt, and black pepper.

  • While whisking continuously, slowly pour in the olive oil until the mixture is well combined and emulsified. Set aside.
    3 tablespoons extra virgin olive oil

Assemble the Salad

  • Place the baby spinach in a large mixing bowl or salad bowl. Pour the prepared balsamic vinaigrette over the spinach and toss until the spinach is evenly coated.

  • Top the dressed spinach with sliced strawberries, crumbled goat cheese, chopped walnuts, and diced red onion.

  • Serve immediately and enjoy!

Notes

  • Storage: Store dressed salad in an airtight container in the fridge for up to 24 hours. For undressed salad, keep it in the fridge for 2-3 days, but store spinach, strawberries, goat cheese, walnuts, and red onion separately to maintain textures. Keep leftover balsamic vinaigrette in the fridge for up to 2 weeks.
