  • 1 pound (approx. 12-15) fingerling potatoes halved lengthwise
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup grated parmesan cheese

Instructions

  • Place the potatoes in a large mixing bowl. Drizzle with olive oil, garlic powder, kosher salt, and ground black pepper, and toss to coat.

  • Preheat the air fryer to 375°F for 2 minutes. Add the potatoes and cook for 15 minutes, shaking the air fryer basket vigorously halfway through. Shaking the basket helps avoid uneven cooking.
  • Sprinkle potatoes evenly with parmesan cheese and cook for an additional 2-3 minutes. Serve immediately.

Notes

  • Quick Tip: No air fryer? No problem! Simply roast the fingerling potatoes in the oven at 425°F for 20-25 minutes instead.
  • Storage: Store leftover potatoes in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 1 year.
  • Make Ahead: Cook the potatoes up to 3 days in advance, then reheat them in the air fryer or oven.
