Teriyaki Udon Noodles

These Teriyaki Udon Noodles are perfect for a quick and easy weeknight dinner. Made with udon noodles and a simple homemade teriyaki sauce, this flavorful side dish is made with just 7 ingredients and only takes 15 minutes to throw together. Serve with your favorite protein and stir-fried vegetables for a well-balanced meal.

Ingredients

  • 10 ounces udon noodles
  • ¼ cup low-sodium soy sauce
  • ½ cup water
  • 2 tablespoons brown sugar packed
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon sesame oil
  • 2 cloves garlic grated
  • ¼ teaspoon ground ginger

Instructions

  • Cook the udon noodles for 1-2 minutes less than the recommended time on the package instructions. For the brand of udon noodles I used, this was approximately 7 minutes. Drain the noodles and set aside.
  • While the noodles are cooking, whisk together the remaining ingredients in a small mixing bowl. Then, after draining the udon noodles, place the same pot back onto the stovetop over medium-low heat. Pour in the teriyaki sauce mixture and bring it to a gentle simmer.
  • Add the cooked udon noodles to the simmering teriyaki sauce. Toss the noodles continuously to prevent sticking until the sauce has thickened and clings to the noodles. Remove from heat and serve immediately. Garnish with sesame seeds and chopped green onions, if desired.

Notes

  • Storage: Store leftover teriyaki udon noodles in an airtight container in the refrigerator for up to 5 days.
